Made of advanced ceramic, the hardest substance in the world second only to diamond, Kyocera's knives are truly a force to be reckoned with. They are not like the traditional steel knife, in fact they are extremely light. But they are also incredibly durable and 10 times sharper than your average steel knife. The ceramic blades will neither rust nor tarnish through use, and because of the way the knives cut they won't make avocados or lettuce go brown. An added benefit of buying Kyocera knives is that they do not need to constantly be resharpened. The knife will keep its edge for over five years, and at that point you can post it back to their warehouse in Brisbane and they'll resharpen it for free! The blades are incredibly rigid, and this makes them great for cutting vegetables, meats or breads, but unfortunately it also means they cannot be used on frozen food. Apart from that though, anything goes.
These knives are the pinnacle of Japanese ingenuity, and what they can do is truly astonishing. The medium santoku knife is good for fish, poultry and fruits and the blade measures 11.5cm
